Organic & Biodynamic
From a blend of parcels in the Bray commune. Hand-harvested. Slow, whole-bunch pressing into enamel lined tanks. 10 months cool fermentation and then bottled.
Hint of reduction. Still that rich apricot & stone fruit profile, but held in by bright, zingy, linear acidity. More stony tension.
