Each plot has their own distinct personality, on Petit Clos the Pinot grows on limestone bedrock lending minerality and fine, red fruits. Grand Clos adds richness and power thanks to the deep clay-marl soils.\u003c\/p\u003e\n\u003cp style=\"white-space: pre-wrap;\" data-rte-preserve-empty=\"true\"\u003eHand harvested, the pinot undergoes cold pre-fermentation maceration for 5 days. After 10 days of post-fermentation maceration the wine goes into barrel on the fine lees for 12 months, followed by 2 further months in tank. 30% new oak.
